- Gravlax of salmon tartare style, dill cream
Choice of dish :
- Supreme of guinea fowl in Banyuls sauce, crushed potatoes with truffles
- Roast Aubrac beef with foie gras sauce, truffled Aubrac aligot
- Roasted salmon steak with sauce vierge, risotto (only in Perpignan)
